If you love bananas as much as I do these super cute cakes are the perfect thing to try. They taste a lot like bananas and they are vegan. I would not recommend cooking these as a big cake, because it would take very long to cook. But in small cake forms they work great and look super adorable.
They are also super easy to make and don`t take up to much time.
- 200g bananas
- juice of half a lemon
- 50 ml almond milk (or any other milk substitute)
- 110g margarine
- 140g sugar
- 1 pinch of salt
- half an avocado
- 200g flour
- 1 tbsp baking soda
- Preheat the oven to 350°F/180°C. Mash the bananas and mix them with the lemon juice and the almond milk.
- In another bowl beat the margarine and gradually stir in the sugar, avocado and salt. Sift in the flour and baking soda. Also add the bananamilk and beat until everything is well combined. If you want to you can also add some vegan chocolate chips.
- Fill into greased mini cake forms and bake for about 25 minutes. (If the top gets a little dark and the inside is not quite done yet place tin foil over them ). Let them cool down and enjoy.
