Rhubarb cake

Rhabarber Kuchen 2

This is a very cool looking cake. It is perfect for the summer because it is sweet and fruity. If you like rhubarb this might be the perfect cake for you to try this summer.

Another great benefit of this cake it that it is super easy to make. And most of the ingredients are probably already in your kitchen. You also don`t need a cake pan, just a baking tray.



  • 500g rhubarb
  • 170g softened butter
  • 170g + 40g sugar
  • 1tsp vanilla extract
  • 3 Eggs
  • zest of 1/2  lemon
  • a pinch of salt
  • 80ml milk
  • 340g flour
  • 10g baking Soda


  1. Preheat the oven to 350°F/180°C. Place parchment paper onto your baking tray. Wash the rhubarb and cut into 4 cm long  pieces.
  2. Beat the butter with 170g of sugar and vanilla extract until creamy. Mix in the eggs one by one. Then add lemon zest, salt and butter.
  3. Mix the flour with the baking Soda. Add the flour to the butter mixture and mix until combined. Put the dough on the baking tray and spread evenly.
  4. Place the rhubarb on top of the dough. Place two slices horizontally and the next Rabarber kuchentwo slices vertically until the whole dough is covert. Press them down a little into the dough. Sprinkle the rest of the sugar on top and bake for 20-25 minutes.
